Did you know that there are different types of gin? We’re not just talking about craft gin flavours here – we’re talking about how they’re made, where they’re made, and what they’re made from. #1 - Cold Compound Gin

 

Also known as bathtub gins, this style gained popularity during the years of prohibition in the USA. These are often made by mixing in juniper with other flavours into a neutral spirit, and they’re easy to make at home. However, the lack of a proper distillation process usually means they aren’t nearly as high quality as the craft gins that we’ve come to create and love at our gin distillery in Melbourne.

 

#2 – Genever

 

Originating from Holland, this is the true ancestor of what we know as gin today. As a mix of a neutral spirit infused with botanicals and malt-wine, it has a much deeper flavour of rye, barley and maize to go along with an intense juniper flavour. That’s why it’s treated to its own, individual category.

 

#3 – London Dry Gin

 

This is the classic standard for modern gin. Popularised in London, it’s a recipe that is recreated around the world by many distilleries, including our distillery in Melbourne. Although each distillery modifies their recipe to create their own, individual take on London Dry, the general characteristics of this craft gin is strong Juniper notes accompanied by traditional botanicals like coriander seeds, citrus peel, and angelica root.

 

#4 – Gin de Mahón

 

Originating from Mahón in Menorca, this gin carries Protected Geographic Status (PGI), which means that only gin produced in this area can be known by the name – a bit like champagne originating only from the Champagne region of France. The only Gin de Mahón currently being produced is Xoriguer, which is made using a unique recipe consisting of a wine base sourced from Xarel-lo grapes, 2-year-old Juniper that is matured for 2 years at the harbour, distillation through a direct-fire copper pot still, and aged in American Oak barrels.

 

#5 – New Western Dry Gins

 

This is a modern term for many of the craft gins that we see on our shelves today. These gins are usually very low in Juniper and, for many specialists, are more like flavoured vodkas than true gins. At our distillery in Melbourne, we don’t produce these types of gins – our craft gins adhere to more classical traditions of having a noticeable and significant Juniper base.
