There are a few different distillation methods used to create craft gin , each with their benefits and drawbacks. Here’s some insight into how the best gin is made, from a leading distillery in Melbourne . Steep and Boil This is the most traditional method of making craft gin, and it’s behind some of the best gins in the world, including those at our distillery in Melbourne.  A mix of juniper and other botanicals (herbs, spices and fruit) is soaked in a mix of pure, neutral alcohol and water (about 50-50) for about 48 hours. The mixture is then distilled in a pot still to produce a richly flavoured alcohol that is then reduced with water to bottling strength (around 48% alcohol). A variation of this method is individual botanical distillation, where each different ingredient is steeped and boiled separately rather than part of a mix, and then blended together by the producer.
