How is Craft Gin Made?
There are a few different distillation methods used to create craft gin, each with their benefits and drawbacks. Here’s some insight into how the best gin is made, from a leading distillery in Melbourne.
Steep and Boil
This is the most traditional method of making craft gin, and it’s behind some of the best gins in the world, including those at our distillery in Melbourne.
A mix of juniper and other botanicals (herbs, spices and fruit) is soaked in a mix of pure, neutral alcohol and water (about 50-50) for about 48 hours. The mixture is then distilled in a pot still to produce a richly flavoured alcohol that is then reduced with water to bottling strength (around 48% alcohol).
A variation of this method is individual botanical distillation, where each different ingredient is steeped and boiled separately rather than part of a mix, and then blended together by the producer. Producers who prefer this as a method for making the best gin say it gives greater control over the flavour of the finished product.
Vapour Infusion
This is an interesting and more modern method of infusing flavour into the alcohol without actually mixing the spirit with the botanicals. Instead of mixing them in together and letting them steep, the botanicals are placed in baskets in modified stills where they interact with the vapour from the spirit. As the vapour condenses, it mixes into the craft gin, flavouring it. Again, water is added to bring the alcohol content down to about a 48% bottle strength.
Vacuum Method
This uses the steep and boil method but then redistills the craft gin under a vacuum. This reduces the temperature at which the spirit boils, which producers claim creates the best gin with a fresher flavour. It’s an interesting idea, as heat certainly affects the flavour of fruits, flowers, herbs and spices, but the method itself is a bit impractical as it is very difficult to scale it up for production. As a result, it is only practical for a small distillery in Melbourne.
